Cast iron hibachi grills are small, portable grills heated with charcoal. Ironically, they bear a closer resemblance to a traditional Japanese shichirin than a traditional Japanese hibachi.

True Japanese hibachis are small, charcoal-burning pots that were traditionally used to heat homes, not to cook! However, when shichirin-style portable grills were first introduced to the United States, the marketers were afraid Americans would not be able to pronounce the term, so they called them hibachis instead.

American-style hibachi grills are most commonly made from either cast iron or aluminum. Aluminum hibachis tend to be cheap, poorly constructed, and prone to rusting, so they are not recommended.

Cast iron hibachis, on the other hand, are durable and long-lasting, yet inexpensive.

The primary disadvantage of hibachi grills is their weight, which makes them unsuitable for backpackers and others who would need to haul the grill long distances. However, they are perfect for car camping, tailgate parties, backyard entertaining, and home BBQ dinners.

Like all cast iron cookware, hibachi grills heat very evenly and retain heat well. They are direct heat cookers, not smokers, so they do not have a lid and are best suited to thinner foods such as steak, fish, burgers, kebabs, and veggies.

Though not as prone to rust as cheap aluminum hibachis, cast iron hibachis can rust if exposed to the elements, so clean and dry the hibachi thoroughly after every use and store it in a dry place.

In order to build up the grill's seasoning, which makes it non-stick and easier to clean, as well as adding flavor to the food, spray it lightly with olive or vegetable oil before and after each use.
